A memorandum of understanding (MOU) was signed between integrated resort operator Sands China and the Macao University of Tourism (UTM) yesterday at The Londoner Macao, marking the launch of the two-year Sands China Western Culinary Elite Programme.

The programme, which includes eight-week training at École Ducasse in France, will cover academic theory, professional certification, and hands-on training at integrated resorts over their 24-month course.

After finishing the programme, which uses a “hire and train” model, participants will be offered Cook I positions at Sands China.

Sands China Chief Executive Officer and Executive Director Grant Chum Kwan Lock said: “UTM is our long-serving partner, and we are delighted to sign an MOU with them to launch the Sands China Western Culinary Elite Programme, with the aim of combining our respective strengths in industry resources and academic expertise.

“By supporting young local culinary talents’ studies at France’s internationally renowned École Ducasse, we hope they can enhance their skills and broaden their international perspectives, thereby enriching Macau’s talent pool”, Chum added.

UTM Rector Fanny Vong Chuk Kwan said that “through this new partnership, our graduates will gain hands-on training at integrated resorts, while overseas study will broaden their cross-cultural horizons, further supporting the long-term growth of Macau’s tourism sector.”

The Innovative Hospitality Management Symposium was held after the signing, bringing together experts and scholars, Sands China management and industry representatives, to tackle hospitality and the latest technology, using AI and robotics in the hospitality industry, and the latest innovations for meeting the UN Sustainable Development Goals in three panel discussions.

Meanwhile, Vong told media on the sidelines of yesterday’s event that the university has recorded close to 1,000 student enrolments this year, a record high.

Vong added that the university will continue to prioritise the admission of local students. Moreover, regarding the recent employment situation of UTM graduates, Vong mentioned that more than 70 percent of graduates enter service-related industries.

She also commented on a significant plan currently underway in participating in the construction of an international education university city in the Guangdong-Macau In-depth Cooperation Zone in Hengqin. It is preparing courses and faculty resources while continuing to recruit distinguished teachers to support its growing enrolment and courses.
